When creating a meal I always try to think in whole terms. Choosing the best ingredients is not only about quality and a specific feature of the produce. For me it is also about the origin; the philosophy of the farmer and the methods used during the lifecycle of the produce. Basically, knowing what the carrot ate.

But it is also about how the food affects us. For example, eating the rainbow for gut health and making sure to regularly eating lots of omega 3s for brain health.

Eating better and better everyday is a life journey.
